Curry Chicken W/ Spinach

- 1 lb boneless skinless chicken breast, cubed
- 2 teaspoons curry powder
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 tablespoon vegetable oil
- 1⁄2 cup onion, chopped
- 1 (13 1/2 ounce) can coconut milk
- 2 tablespoons tomato paste
- 3 cups fresh spinach
- 1 cup tomatoes, chopped
directions
- Mix together curry, salt & pepper- Sprinkle over chicken.
- In a large skillet, saute the onion and chicken until no longer pink, about 8 minutes.
- Stir in coconut milk and tomato paste. Bring to a boil.
- Reduce heat and simmer uncovered for 5 minutes.
- Add spinach and tomato. Cook for 2-3 more minutes.
- Serve over rice.
