Curry Chicken Salad

"This is such a big favorite of mine. I got it from a cookbook my mom gave me. I ended up changing it a bit from what it originally was and I'm quite pleased with it. :)"

  • Combine first five ingredients in a large bowl.
  • In a small bowl, combine mayo, lime juice, and curry powder.
  • Add to chicken mixture.
  • Toss to coat.
  • Cover and refrigerate for at least 2 hours.
  • Enjoy!

  2. I had 6 chicken breasts in the fridge and decided to try this recipe. I substituted walnuts for pecans, red grapes for the cranberries, & a red onion for the green onions. I added lots more curry powder because I love curry! I could barely get the bowl covered before my hubby and kids started in on it!! It was even better after 2 hours in the fridge. Will do this one again and make different substitutions w/ the fruit. Great recipe. Thanks rainyfriday!
