ingredients
- 2 cups cooked chicken, cubed
- 1 cup pecan pieces
- 4 ounces dried cranberries
- 1 stalk celery, sliced
- 2 green onions, sliced
- 3⁄4 cup mayonnaise
- 2 teaspoons lime juice
- 3⁄4 teaspoon curry powder
directions
- Combine first five ingredients in a large bowl.
- In a small bowl, combine mayo, lime juice, and curry powder.
- Add to chicken mixture.
- Toss to coat.
- Cover and refrigerate for at least 2 hours.
- Enjoy!

I had 6 chicken breasts in the fridge and decided to try this recipe. I substituted walnuts for pecans, red grapes for the cranberries, & a red onion for the green onions. I added lots more curry powder because I love curry! I could barely get the bowl covered before my hubby and kids started in on it!! It was even better after 2 hours in the fridge. Will do this one again and make different substitutions w/ the fruit. Great recipe. Thanks rainyfriday!
