Curried Salmon Cakes

"I like to add in a couple tablespoons of fresh lemon juice also! Please adjust the curry powder to taste. This recipe will make four about 3/4-inch patties but can easily be doubled. Plan ahead the patties need to chill for 1 hour before frying."

  • 2 large eggs, lightly beaten
  • 425.24 g salmon (use red or pink salmon, drained and bones removed)
  • 1 small apple, peeled and finely chopped (about 1/2 cup chopped apple)
  • 59.14 ml fine dry breadcrumb (more if needed)
  • 2 green onions, finely chopped
  • 29.58 ml mayonnaise
  • 4.92 ml curry powder (can use more to taste)
  • 2.46 ml paprika
  • salt and black pepper
  • oil (for frying)

  • In a bowl break up the salmon with a fork; add in eggs, apple, bread crumbs, onions, mayo, curry powder and paprika; mix to combine well.
  • Season with salt and pepper to taste (if the mixture is too soft add in a little more bread crumbs if needed).
  • Shape into four patties; place on a plate, cover and chill for a minimum of 1 hour to blend the flavors.
  • Heat oil in a frypan over medium heat; add in the patties and fry until golden brown (about 4-5 minutes per side).
  • Delicious!

  1. Made these salmon cakes over the weekend and I'm still enjoying the leftovers. I increased the amount of curry powder and added some lemon juice, as suggested, but did not otherwise alter the recipe. I served these cakes with a honey mustard lime sauce. Very delicious.
     
  2. OMG! This is delicious! Kittencal thank you for this wonderful recipe. I made this tonight and served it for dinner 3 hours ago. My husband is still raving about how delicious the meal was! I added more curry powder and used cayenne pepper in place of the paprika as we are 'spicy' folks. I also added the lemon juice. I served it with a lettuce tomato salad and wild rice. YUMMMMMIE!
     
  3. I made the mixture up for this in the AM and put in the frig till evening when I made up the cakes. I used Maharajah Curry Powder and lots of fresh lemon juice. Next time, and there will be a next time, I think I will use a hot curry powder as we like a little more bite. Served them with more lemon slices to squeese on, coleslaw, baked sweet potatoes and roasted asparagus. Really yummy Kittencal. Thanks for posting.
     
  4. I really wasn't expecting to like this...I think it had something to do with the apple...but it was a very tasty dish. I love curry and thought the amount listed was just right. I followed the recipe exactly (but used light mayo) and added a little lemon juice like Kittencal recommended in the intro. It's not too difficult to put together either. Thanks for the recipe, I'll be making it again.
