- 236.59 ml pumpkin, grated
- 236.59 ml sweet potato, grated
- 2 medium potatoes, grated
- 1 large carrot, grated
- 1 large zucchini, grated
- 1 large onion, finely chopped
- 236.59 ml green beans, chopped
- 236.59 ml mushroom, sliced
- 236.59 ml brown lentils, cooked
- 3 eggs, lightly beaten
- 118.29 ml plain flour
- 118.29 ml self raising flour
- 14.79 ml mint, chopped
- 4.92 ml ground coriander
- 4.92 ml ground cumin
- 4.92 ml turmeric
- 9.85 ml curry powder
- 177.44 ml cheddar cheese, grated
- salt
- fresh ground black pepper
directions
- Combine all ingredients except cheese in a large mixing bowl and mix well.
- Divide the mixture between two oiled loaf tins and press firmly, even the top.
- Decorate each loaf with your choice of thinly sliced vegetable e.g. zucchini, tomato, capsicum.
- Sprinkle grated cheese evenly over the tops.
- Bake in a moderate oven for 30-45 minutes.
