The slight bitterness of the endive is nicely offset by the sweetish earthy taste of the beetroot. Sunflower seeds add some extra crunch.

  1. Roast sunflower seeds in a dry pan or skillet.
  2. Chop onion finely. Prepare a dressing from vinegar, oil, salt and pepper to taste; mix with onion.
  3. Clean endive and cut into thin strips. Clean beetroot and cut chop coarsely.Mix endive, beetroot and dressing; distribute sunflower seeds on top.
