  • 1 whole chicken
  • 1 cup celery, chopped
  • 1 cup tomatoes, chopped
  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 2 tablespoons fat free sodium free chicken broth
  • 1 tablespoon ground thyme
  • 1 tablespoon rosemary
  • 3 garlic cloves, minced
  • 1 tablespoon Mrs. Dash seasoning mix, Original Blend

  • Remove giblets from chicken or use them if you like. Wash the chicken and place it backside down in the crock pot. Sprinkle all ingredients into the crock pot covering the chicken. Add water until the crock pot is almost full. Cover and set your crock pot to cook on Low 8-10 hours.
  • When you arrive home in the evening, your chicken will be falling off the bones in your crock pot. If desired, use salt and/or pepper to season the broth to your taste preferences. Make some rice (Instant is fine) as a side dish.
  • Spoon the chicken and vegetables out of the crock pot carefully removing ALL the bones. Serve your juicy tasty chicken and veggies over your rice.
  • Strain and save the unused broth from your crock pot for your next homemade stew (you'll have about 3 quarts of broth).

  1. This was very good! The chicken came out extremely tender, and I was pleased that it cooked through in 9 hours despite the fact that I put it in partially frozen (it was quartered which probably helped!). I would probably add some black pepper to this as I love it with poultry, and being the salt-o-holic I am I did salt this liberally on my plate. You are right, instant rice is a great side; I boiled mine in chicken broth with a few cloves of garlic and some finely chopped broccoli and it was a great meal. Thanks for posting. Made for PAC Fall 2008.

  3. The herb flavor here is perfect. I can't wait to use the broth -- safely tucked away in my freezer now -- for something else. I added some parsnips and more carrots and didn't make it with rice. Norm, this is a winner!
