Crispy Potatoes With Bacon, Garlic and Parsley

  • 1 12 lbs red potatoes, unpeeled and quartered into 1 1/2" pieces
  • 1 teaspoon salt
  • 3 slices bacon, cut into 1" pieces
  • 1 -2 tablespoon butter
  • 2 tablespoons chopped fresh parsley
  • 1 -2 clove minced garlic
  • salt and pepper

  • Put the potatoes and salt in a medium saucepan and cover with cold water.
  • Bring to a boil over high heat and simmer for 1 minute, then drain and pat dry.
  • In skillet, saute bacon over medium heat and cook until crispy.
  • Remove bacon with a slotted spoon and set aside on paper towels.
  • Add butter to bacon fat and increase heat to medium.
  • Add potatoes to pan so that the cut sides get nice and brown.
  • Cook, turning only as needed until the potatoes are golden brown, about 25 minutes.
  • Stir in parsley, garlic and bacon and stir until lightly browned.
  • Season with salt and pepper to taste.

  3. This was absolutely delicious. I made them for dinner one night and the bf loved them. Made them at a friends house, and it was all they could talk about. I like serving them with Sour Cream. I think the bf ate them with a little ranch. whatever u have on hand. I used garlic powder instead of garlic cloves just because I never have garlic cloves. I seasoned to taste on everything. Excellent.
     
  4. We enjoyed this very much, thank you for posting! I did halve the recipe as far as the amount of potatoes (there was only 2 of us), however, I kept the same amount of bacon, garlic, and parsley. I poured off a litte of the bacon grease, since I was using less taters, and I only used 1 TBS of butter. Very tasty with a little salt, pepper, and a dash of HOT Hungarian paprika, a keeper!
     
  5. We loved these potatoes! Although I may biased because its ne of my favorite combinations. ;) Made them as staed except I made a double batch and I'm very glad I did. They were a big hit!
