  • 1 tablespoon oil
  • 13 - 12 cup cornstarch, plus
  • 12 tablespoon cornstarch, divided
  • 3 3 lbs flounder or 3 lbs sole
  • 1 tablespoon oyster sauce
  • 1 tablespoon black bean garlic sauce
  • 1 cup chicken stock
  • 12 tablespoon sugar
  • 14 teaspoon dried basil

  • Place cornstarch in a bowl and dredge the fish through the cornstarch. Shake off the excess.
  • Add oil to pan and fry fish on both sides until fish flakes with a fork. Set aside fish.
  • In the same pan, add oyster sauce, black bean sauce, chicken stock, sugar and basil.
  • Mix 1/2 cornstarch to 1/2 tablespoon water in a small bowl and add to the sauce when it comes to a boil. Cook until sauce thickens.
  • Pour sauce over fish just before serving.
