- 1 tablespoon oil
- 1⁄3 - 1⁄2 cup cornstarch, plus
- 1⁄2 tablespoon cornstarch, divided
- 3 3 lbs flounder or 3 lbs sole
- 1 tablespoon oyster sauce
- 1 tablespoon black bean garlic sauce
- 1 cup chicken stock
- 1⁄2 tablespoon sugar
- 1⁄4 teaspoon dried basil
directions
- Place cornstarch in a bowl and dredge the fish through the cornstarch. Shake off the excess.
- Add oil to pan and fry fish on both sides until fish flakes with a fork. Set aside fish.
- In the same pan, add oyster sauce, black bean sauce, chicken stock, sugar and basil.
- Mix 1/2 cornstarch to 1/2 tablespoon water in a small bowl and add to the sauce when it comes to a boil. Cook until sauce thickens.
- Pour sauce over fish just before serving.
