ingredients
- 1182.95 ml self-rising cornmeal
- 415.80 g can cream-style corn
- 283.49 g can diced tomatoes with green chilies
- 2 large eggs
- 473.18 ml buttermilk
- 3 medium onions, chopped
- 1 banana pepper, chopped
- 118.29 ml bell pepper, chopped
- 4.92 ml creole seasoning
directions
- Combine all ingredients in a large bowl; stir together just until moistened.
- Heat oil in a Dutch oven to 375°F.
- Drop teaspoonfuls of batter into the hot oil and fry 2-3 minutes or until golden brown, turning once.

These were really good and my hubby really liked them but I had to leave out the corn as I can't have it. I agree that it makes a lot but hubby wanted to save leftovers because they were that good. He also wants me to try to use the recipe for baking in a pan as cornbread. Just might try it! I will use hot Rotel next time as they didn't have much zing with the mild. Thanks for a great recipe! Made for PAC 2008.

I also scaled the recipe down for our household, and it made PLENTY! I used the tips from GW as I was unable to find self rising cornmeal too....these were wonderful- my DH loved them! We willbe using this as our default hus puppy recipe from now on! ;) Thanks for posting! **Aussie recipe swap #8 (2007)

These are GREAT! I did have to improvise a bit. First I took your advise and cut the recipe in half. Half a recipe is still alot, but guess it would be difficult to make any further reductions... 1/2 of an egg? We don't have self-rising cornmeal in this part of the country so had to make my own...(2 cups Corn Meal, 1/4 cup flour 2 1/2 Tablespoons baking powder 1 tsp. salt). Only question I had was whether to drain the tomaotes. . . so, used a 1/2 can of Rotel tomatoes (without the juice). They were VERY tasty . . . even better than my Texan Momma use to make!
