    This pairs with Greek Chicken Roulades W/White Wine Reduction, very nicely, also from Cuisine at Home magazine. Start boiling the pasta before making the roulades, then finish the orzo dish while the chicken simmers.

    Directions:

      Bring broth to a boil in a small saucepan and stir in orzo.
    2. 2
      Return liquid to a boil.
    3. 3
      Cook orzo, uncovered, stirring occasionally until liquid is absorbed, approximately 9 minutes.

      Remove saucepan from heat.
    5. 5
      Stir tomatoes and feta into orzo, mixing until feta melts slightly.
    6. 6
      Season orzo with salt & pepper.
    7. 7
      Serve with the Chicken Roulades.

      Made this as the side dish to the Greek Chicken Roulades with white wine reduction. Absolutely delicious. Will be making it again soon!
