¹⁄₄ cup light mayonnaise
1 tablespoon lime juice
¹⁄₂ teaspoon ground cumin
2 cups cherry tomatoes, quartered (or grape tomatoes)
1 mango, medium-ripe, peeled, chopped
¹⁄₂ cup red onion, chopped
1 medium jalapeno pepper, finely chopped (optional)
1 teaspoon fresh cilantro, chopped (optional)

directions

In a medium bowl, whisk together the mayo, lime juice & cumin.
Stir in remaining ingredients & serve with chips.

This was a really nice, fresh tasting salsa! I used mine to garnish and grill inside quesadillas. The only thing was that it felt a little dry to me. Next time I'll add about 1/4 cup of salsa to make it a little saucier - just a personal preference though! Made for PRMR tag game.
