Creamy Chicken-Apple Chili

"Got this recipe from Everyday by Rachael Ray. I am a beginner cook. My husband tried this and said that it was his favorite! He said that he would give it five stars and would like to have this served more often. Easy to make and most of the ingredients are already on hand. YUM. The recipe is customizable! Use substitutes if you have to. :)"

  • In a large dutch oven, heat 2 tablespoons of olive oil over med-high heat.
  • Add chicken, chili powder, and cumin (don't worry, it was NOT spicy to us, my toddler ate it.).
  • Season with salt and pepper and cook for 5 minutes, stirring occasionally; transfer to a bowl and set aside.
  • In the same pot, heat the remaining 2 tablespoons of olive oil. Add the apples and onion and cook, stir, until softened - about 6 minutes; Add to bowl with chicken.
  • In the same pot, melt the butter over med-low heat. Whisk in flour for about a minute; whisk in the chicken broth and milk, until thickened - about 3 to 4 minutes.
  • Stir in the apples, chicken, and beans. Bring to a simmer.
  • Stir in cheese and cook until the cheese has melted.
  • Serve with the tortillas and scallions.
  • ENJOY!

  2. I either add or substructure the chicken for sausage. Its a great addition just dont forget to drain it if you do. This is a great easy recipe. I love RR because she really does TEACH you how to cook (if you dont already know, which I didnt). I am a great cook now and I started by watching 30 min meals.
     
  3. Excellent chili. I made half a recipe using left over roasted chicken. I started the recipe but had to leave for an hour, came back and added additional milk and the cheese. Served with Recipe #398870. Really great with the cold weather we are having.
     
  4. This was very good, not too spicy for our tastes. I cut the recipe in half for the two of us. Used half the chicken amount cause that's all I had on hand. It still was great, we really enjoyed it and will make it again. Thank You.
     
  5. I had some extra apples that I wanted to use up and thought this would be a perfect way to used them. We thoroughly enjoyed this chili! The apples gave a sweetness that really complimented the rest of the ingredients. Can't wait to make it again. Thanks for sharing, trksh22.
