Cream Cheese Icing W/Orange Zest

"Try this recipe on the banana bread recipe from author Ann Hodgman's "Beat This" cookbook. Make them into cupcakes instead of loaves, baking the cupcakes for 20 minutes instead of the 45-55 minutes for loaves. Top with this icing!"

  • Beat cream cheese & butter together until light and fluffy.
  • Beat in 1 cup of powdered sugar.
  • Add in orange zest, salt & flavorings.
  • Add in remaining powdered sugar, one cup at a time until it's all incorporated.
  • Beat mixture at high speed for about 5 minutes, or until light and fluffy.

  1. Two changes I made when preparing this ~ I used orange extract instead of almond, & I was generous with the orange zest! Turned out great, & I frosted a handful of muffins we had, then used more of it as a spread on slices of banana bread! Definitely a recipe to make again & use on an orange cake I have in mind! My great passion is watching my daughter perform with her high school bands. She absolutely amazes me at her talent! As a board member of our local summer youth theater organization I get to work with so many talented teens from all over the area. These kids prove that not all teens are bad and lazy, they work hard all summer long to put on a quality show for the community and I'm proud to spend time with them. I use many of the cookie/dessert recipes here to prepare for show weekend to sale at the concession booth before and during intermission each evening. <br /><br />My all time pet peeves are people who talk through movies and people who chew with their mouths open. <br /><br />If I had a month off with no work to do...I would plan it for the fall so that I could travel to football games around the country.</p>
