Crazy Whole-Wheat Spice Cake

"Most Crazy Cakes seem to be the chocolate version. This one is NOT chocolate but still simple and good! Clipped this one from a magazine way back in 1979."

ingredients

• 1 cup whole wheat flour
• 1⁄2 cup all-purpose flour
• 1 cup sugar
• 1 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1 teaspoon cinnamon
• 1⁄2 teaspoon nutmeg
• 1⁄4 teaspoon ground cloves
• 1⁄2 cup whole all-bran cereal
• 1 cup cold strong coffee
• 1⁄4 cup oil
• 1 tablespoon vinegar
• 1 teaspoon vanilla

directions

1. Mix well the flours, sugar, soda, salt and spices; set aside.
2. In an 8 x 8 inch square pan, mix well the bran cereal and coffee. Let stand 2 minutes or until cereal is softened. Stir in oil, vinegar and vanilla, then stir in flour mixture until smooth.
3. Bake in 350 F oven for 35 to 40 minutes or until pick inserted in centre comes out clean. Cool completely in the pan on a wire rack. Cut in 9 squares or as desired to serve.

Sweet , moist , dark , and spicey !! This is EXACTLY what a spice cake should be !! WONDERFUL !!! I love this cake and plan on making it a staple in my home . I have been looking for healthy , lower fat recipes and , this is a dandy !!! Thank You for sharing !!!
