Cranberry Scones

- 2 cups flour (at least)
- 6 tablespoons sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup butter
- 1⁄2 cup milk (scant)
- 2 large eggs
- 1 teaspoon vanilla
- 2 tablespoons orange juice
- 1⁄2 cup cranberries (fresh or frozen)
directions
- Combine dry ingredients.
- Cut in butter.
- Combine wet ingredients.
- Mix dry and wet together, just until wet.
- Fold in cranberries.
- Spoon mixture into greased a scone pan, or into muffin tins, or spoon by tablespoons onto a greased baking sheet.
- Bake in a 400* oven 20-25 minutes.

Great recipe, too bad I didn't read it through before I started, because I didn't realize that they are drop and I threw the dough out onto the counter...a little messy. Anyway, I dropped them onto a heated Pampered chef stone, they only took 15 minutes to bake to a lovely golden brown. Sprinkled them with a little raw sugar...very light and tasty. More like a muffin than a scone, in my opinion. Delicious, though.
