Cranberry Sauce with Orange

- 3⁄4 cup water
- 1⁄2 cup light brown sugar, packed
- 1 (12 ounce) package cranberries (about 3 cups)
- 2 teaspoons orange rind, grated
directions
- Stir water and sugar in heavy medium saucepan over medium heat until sugar dissolves.
- Bring mixture to boil.
- Add cranberries and orange peel.
- Reduce heat and simmer until berries burst, about 5 minutes.
- Remove from heat. Cool completely (sauce will thicken as it cools) (Can be prepared 1 week ahead.
- Cover & chill)

WOW!!!!! Talk about taste! and so easy to prepare. Prep time: 5 Minutes, Cook Time 10 Minutes, Cooling Time 30 Minutes. I really like the orange flavor to bounce out. So I added 2 more teaspoons of grated orange rind. I added one teaspoon of orange extract at the end of the cooking time, stirring into sauce. I mashed the cranberry mixture, this making the sauce a little smoother. We all enjoyed, living happly ever after.
