"This is an easy, delicous way to use up leftover chicken. The amounts of each ingredient can be adjusted to your individual preference-- or you can make it as is. Basil can be substituted for cilantro, or it can be completely ommitted. ALSO, if you are watching your carbs, serve this over a bed of lettuce instead of a bun. Enjoy!"

  • 4 cups cooked chicken, cubed
  • 3 tablespoons mayonnaise (light mayo can be used)
  • 2 tablespoons fresh diced cilantro (optional)
  • 1 tablespoon finely diced onion (optional)
  • 34 cup cranberry sauce (whole berry)
  • 14 teaspoon pepper
  • 4 tablespoons cream cheese (light or fat free can be used)
  • 4 -6 toasted buns

  • Combine chicken, mayo, cilantro, onion, pepper and cranberry sauce.
  • Chill for best results.
  • Toast buns and spread with cream cheese.
  • Spoon chicken salad onto bun.
  • Enjoy!

I usual choose recipes that are delicious, simple, and easy on the budget. I prefer recipes with more common ingredients, stuff that I usually have on hand. I especially like recipes with 5 ingredients or less.
