  • Mix the sugar, apple juice and water in a medium saucepan. Bring to a boil, stirring until the sugar dissolves. Stir in the cranberries and return to a boil. Cook, stirring occasionally, until the cranberries pop, 5-6 minutes. Remove the pan from the heat.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and ginger; cook, stirring occasionally until softened, 2-3 minutes. Stir in the apples and cook until crisp tender, about 2 minutes.
  • Stir the apple mixture into the cranberry mixture and let cool.
  • If making ahead, transfer to an airtight container; cover and refrigerate up to 2 weeks.
