Country Style Chicken Hash Brown Bake

"I got this idea from a couple of different recipes that I liked the sound of but wasn't quite satisfied with. This came out great and the family loved it. I have also listed some variations which I have tried and liked. It give some options to make it different from time to time. The flavor is great and it is even better after the leftovers sit in the fridge overnight. It reheats well in the microwave. Variations: 1 cup chopped broccoli that has been cooked in the microwave in a little water for 12 minutes, 1 (7 oz) can of diced mild green chilies, 1 c diced celery cooked until tender crisp."

  • 1 (12 1/2 ounce) can tyson premium white chicken meat, drained
  • 30 ounces shredded hash browns, mostly thawed (also called "country style")
  • 1 (10 3/4 ounce) can cream of mushroom soup, undiluted
  • 1 (16 ounce) container sour cream (I used a little more than half)
  • 2 teaspoons onion powder (or to taste)
  • 2 teaspoons garlic powder (I used more because we love garlic)
  • 2 cups sharp cheddar cheese, grated (mix some in with the casserole and put the rest of top)

  • Pre-heat oven to 350-375 (depending on how good your oven is).
  • If using, saute celery until tender crisp and set aside.
  • If using, cook chopped broccoli in sm. amt. of water in microwave for 12 minutes and drain.
  • Mix all ingredients together reserving some of the cheese for the top.
  • Put cheese on top and bake for 30 minutes.
  • Let stand for 5 minutes before serving.

I am married, have three children and two grandchildren. My youngest "oops" baby is just turning 17 and is going to be a senior in high school in the fall.. I love to cook and collect recipes. I get a lot of my good recipes from church potlucks. Since I am now retired and a stay at home mom, I have time to search the RecipeZaar site and try a lot of the recipes.
