- 2 (11 ounce) cans mexicorn
- 1 (12 ounce) can rotel, I like hot rotel, but you can use what ever meets your taste
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 bunch green onion
directions
- Drain mexicorn and rotel.
- slice green onions.
- mix all ingredients together.
- chill for at least 4 hours.
- serve with torilla chips or Fritos.

I made this for my friend's Christmas party and it was amazing! I skipped the green onions and used a colby-jack blend in place of the cheddar. Also, I could only find 10 oz. cans of Rotel at my supermarket, but it seemed to work fine without the extra 2 oz. The dip was super easy to make and, after sitting in the fridge for a few hours, was delicious. I'm making it again for my work dip party tomorrow!

This is such a simple and tasty dip. Very fresh tasting and though it has mayo and sour cream, it does not seem heavy at all. Only trouble I found with it....it's too easy to eat way more then you should. :) I could not find Mexicorn at my store, so I added a can of diced green chilies to the corn and Rotel tomatoes before I added the other ingredients. I love the fact that this is so simple to make and not very expensive. It is a perfect dip to take to potlucks and other gatherings. Thanks for sharing your recipe lababb.
