  • 2 (11 ounce) cans mexicorn
  • 1 (12 ounce) can rotel, I like hot rotel, but you can use what ever meets your taste
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bunch green onion

directions

  • Drain mexicorn and rotel.
  • slice green onions.
  • mix all ingredients together.
  • chill for at least 4 hours.
  • serve with torilla chips or Fritos.

  1. I made this for my friend's Christmas party and it was amazing! I skipped the green onions and used a colby-jack blend in place of the cheddar. Also, I could only find 10 oz. cans of Rotel at my supermarket, but it seemed to work fine without the extra 2 oz. The dip was super easy to make and, after sitting in the fridge for a few hours, was delicious. I'm making it again for my work dip party tomorrow!
     
  2. This is such a simple and tasty dip. Very fresh tasting and though it has mayo and sour cream, it does not seem heavy at all. Only trouble I found with it....it's too easy to eat way more then you should. :) I could not find Mexicorn at my store, so I added a can of diced green chilies to the corn and Rotel tomatoes before I added the other ingredients. I love the fact that this is so simple to make and not very expensive. It is a perfect dip to take to potlucks and other gatherings. Thanks for sharing your recipe lababb. Made and reviewed for Spring PAC 2011.
     
  3. OMG this is sooo good!!! My nieces made this at my sister's 60th birthday party. Thinking it was a side dish I ate it just as it was. When I found out it was a dip I really had trouble stopping myself from eating it. This one is a keeper!! Thanks for sharing!
