  • 34 cup almonds, blanched
  • 1 tablespoon butter
  • 1 lb peeled carrot, grated
  • 34 cup beaten egg
  • 1 12 cups milk
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon finely grated onion

  • Saute almonds in butter until golden.
  • Coarsely chop almonds.
  • Grate or shred carrots.
  • Cook carrots in boiling water until tender.
  • Drain carrots and place in a baking ring.
  • Beat the eggs slightly, then add all of the other ingredients.
  • Mix well and pour evenly over the carrots.
  • Place baking ring in a pan of water.
  • Bake 35-40 minutes at 325 F degrees, until firm.
  • Serve.
