- 3 English cucumbers, peeled and chopped
- 6 scallions, thinly sliced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon sea salt
- 1⁄2 teaspoon fresh ground black pepper
- 1 1⁄2 cups vegetable broth
- 1⁄2 cup sour cream
directions
- Place all ingredients EXCEPT sour cream in a blender or food processor and puree.
- Stir in sour cream until thoroughly mixed.
- Chill until very cold, at least one hour.
- Garnish with additional chopped scallions and green onions.
