Cold Cucumber Soup

"Creamy soup perfect for summer entertaining. You can even serve this soup in a mug for easy pot luck style parties."

• Yields: 4 cups
• Serves: 4

ingredients

• 3 English cucumbers, peeled and chopped
• 6 scallions, thinly sliced
• 1 tablespoon lemon juice
• 1 teaspoon lemon zest
• 1 teaspoon sea salt
• 1⁄2 teaspoon fresh ground black pepper
• 1 1⁄2 cups vegetable broth
• 1⁄2 cup sour cream

directions

1. Place all ingredients EXCEPT sour cream in a blender or food processor and puree.
2. Stir in sour cream until thoroughly mixed.
3. Chill until very cold, at least one hour.
4. Garnish with additional chopped scallions and green onions.
