Coconut - Choc chip Muffins

"Tropical tasting muffins, I got the inspiration for this recipe from Bounty bars (yummy coconut-chocolate snack bars we have in Europe, I don't know if you have them in America too)"

  • 14 cup butter
  • 12 cup sugar, plus
  • 14 cup sugar, for the topping
  • 2 eggs
  • 1 cup coconut yogurt
  • 12 cup milk (if you happen to have a fresh coconut on hand you can substitute the milk with the strained liquid f)
  • 12 teaspoon vanilla
  • 2 12 cups self raising flour
  • 14 teaspoon baking powder
  • 1 cup macaroon desiccated coconut (if you like a stronger coconut flavour you can increase to 1 1/4 cup)
  • 14 cup macaroon desiccated coconut, for the topping
  • 12 cup chocolate chips

  • Preheat oven 180°C and line muffin pans with paper cases or grease them.
  • Beat softened butter and sugar until creamy.
  • Beat in eggs, yoghurt and milk, and vanilla.
  • Fold in chocolate chips.
  • Combine dry ingredients and fold into wet mixture, do not overmix.
  • Mix together the sugar and coconut for the topping, place batter in prepared pans and sprinkle with topping mixture.
  • Bake for 20-25 minutes or until skewer inserted in center comes out clean.

I live in a tiny flat in the center of Milan with my sweet dachshund dog named Penelope (Penny). I'm a doctor specializing in family medicine, though everybody tends to think I'm the nurse or the assistant, or perhaps even a student since I tend to look a lot younger than I am....everybody tells me I'm going to appreciate it, but for now I still find it a little annoying!! I've always loved cooking, when I was a child I wanted to be a patisserie cook (not sure the word is correct...), and I still can't understand how I got to be a doctor instead...anyway I still enjoy cooking at any time, and cooking for friends and family (Penelope included) is my weird way to show them my love (;P)
