- 1 cup water
- 3⁄4 cup white vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 5 medium carrots, peeled and cut into 4-inch lengths
- 1 large garlic clove
- 1⁄4 teaspoon chili flakes
- 1⁄4 teaspoon dried oregano
directions
- 1. To make brine, bring water, vinegar, sugar and salt to a simmer.
- 2. Remove from heat.
- 3. Place garlic, chili flakes, oregano and carrots into a jar.
- 4. Cover with hot brine.
- 5. Cover and let cool at room temperature for about an hour, then refrigerate for at least 2 hours.
