Don't see too many clay oven or clay pot recipes. This is a favorite of mine. It makes a chicken with a golden brown, very crisp skin.
- Soak clay oven in water to cover for 10 to 15 minutes.
- Place lemon in chicken cavity. Tuck wings under, and tie legs together with string, if desired. Place chicken in clay pot, breast side up, and sprinkle with tarragon. Cover with lid.
- Place in a COLD oven. Turn oven to 450 degrees Fahrenheit, and bake 1 hour. Uncover and bake 15 more minutes or until meat thermometer inserted into chicken thigh registers 180 degrees.
I love making clay roasted chicken, but I had never tried this recipe. It was easy & very tasty, I can't wait to have the leftovers tomorrow!! Thanks for posting. GG
This is my first Clay Baker recipe and it is awesome! It was a big hit with the whole family. It was moist and crispy. I threw 4 pealed garlic cloves in the pot. The roasted cloves were wonderful mushed in the rice I served with it.
I love chicken cooked in a clay pot, and this one is tasty and easy! I added some lemon slices to the bottom of the pot before placing the chicken in the pot. Just gave it a little extra lemon flavor. I think I will add some sliced onion next time. Thanks for posting!
