Classic Rice-A-Roni Casserole

  • 1 lb ground meat
  • 3 tablespoons oil
  • 1 14 ounces taco seasoning mix
  • 7 ounces Rice-A-Roni
  • 10 12 ounces condensed cream of mushroom soup
  • 12 cup cooked corn
  • 1 -2 cup grated cheese

  • In a large frying pan put the oil and ground meat (beef, turkey, chicken, etc.). Cook over medium high heat until browned.
  • Add the taco seasoning mix and water per the packet instructions, and finish cooking. Remove from heat.
  • Meanwhile, make up the rice-a-roni per the package instructions. Let cool.
  • To the cooked hamburger meat stir in the mushroom soup and the corn. Add the cooled rice-a-roni.
  • Put the mixture into a greased dish or hollowed out bell peppers. Top with cheese. Bake until hot.
  • Notes: If stuffing into bell peppers, you can add some tomato sauce to the bottom of the pan before baking. If serving as a casserole, it will serve four. If making into stuffed peppers, you will need 10-12 bell peppers, serving at least six. They can be frozen. I like the taste of the bell peppers with the casserole better than just the casserole alone. In the recipe I use the chicken flavored rice-a-roni package, but any of the flavors would work.
