Classic New Potato Salad

  1. Cut the potatoes into halves, or bite-sized pieces if large, and boil in lightly salted water until tender. Drain and place in a large mixing bowl with the apples, red onion, spring onions, dill, chives, and gherkins.
  2. Combine all the dressing ingredients, add seasoning, and pour over the potato mixture. Stir well and serve warm or at room temperature.
