Christmas Carrot Pudding

5 1 quart jars
ingredients
- 1 cup shortening
- 1 cup butter
- 3 cups white sugar
- 4 eggs
- 4 cups flour
- 2 1⁄2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon nutmeg
- 2 1⁄2 teaspoons salt
- 1 teaspoon clove
- 3 cups raisins
- 2 cups mixed fruit
- 10 cups grated carrots
directions
- Cream shortening, butter and sugar.
- Add eggs.
- In a separate bowl mix dry ingredients.
- Wash and dry raisins.
- Add the fruit and raisins to the flour mixture.
- In a large bowl mix the carrots, flour mixture and creamed shortening.
- Fill sealers ¾ full and process in a boiling water bath for 3 hours.
- Makes about 5 quart jars.
