Chocolate Supreme Granola

"This is my own version of those super expensive organic chocolate granolas you can buy in your health food store. I tried to healthify it a bit by not adding much sugar and fat and I really liked what I ended up with. I hope youll enjoy this, too. :) Feel free to experiment with different types of fruits, chips and chocolate. This can be vegan if you use a vegan bittersweet chocolate and vegan pb chips."

  • 12 cup mixed nuts, chopped
  • 12 cup puffed brown rice cereal (no sugar added)
  • 14 cup puffed buckwheat cereal (no sugar added)
  • 14 cup puffed amaranth cereal (no sugar added)
  • 23 cup oats
  • 12 cup corn flakes (unsweetened)
  • 14 cup desiccated coconut (unsweetened)
  • 1 tablespoon ground flax seeds
  • 1 tablespoon honey
  • 100 g applesauce (unsweetened)
  • 12 teaspoon vanilla extract
  • Add in after baking

  • 14 cup raisins
  • 12 cup dried banana pieces
  • 18 cup dried cherries
  • 18 cup peanut butter chips
  • 18 cup carob chips
  • 18 cup chocolate shavings (I used bittersweet)
  • 18 cup mini chocolate chip (I used bittersweet)

directions

  • In a big bowl combine all of the dry ingredients (nuts through flax seeds).
  • Add the honey, applesauce and vanilla extract. Using your hands mix well making sure that everything is coated nicely.
  • Spread the mixture on a rimmed paper-lined baking sheet pressing it together like you would in order to make cereal bars.
  • Bake in the preheated oven at 160°C/320°F for 25 minutes turning the granola once after 15 minutes. This may vary on your oven so keep a close look on it during the last 10 minutes in order not to burn it.
  • Remove from oven and immediately add in raisins, banana chips, cherries, pb chips, carob chips and shaved chocolate. Once the chocolate has melted, stir to ensure an even chocolate coating.
  • Allow granola to cool and then break up bigger lumps and add in the mini chocolate chips.
  • Store in an airtight container in a cool and dark place. It wont keep longer than a week due to the moisture content.
