Chocolate Supreme Granola

- 1⁄2 cup mixed nuts, chopped
- 1⁄2 cup puffed brown rice cereal (no sugar added)
- 1⁄4 cup puffed buckwheat cereal (no sugar added)
- 1⁄4 cup puffed amaranth cereal (no sugar added)
- 2⁄3 cup oats
- 1⁄2 cup corn flakes (unsweetened)
- 1⁄4 cup desiccated coconut (unsweetened)
- 1 tablespoon ground flax seeds
- 1 tablespoon honey
- 100 g applesauce (unsweetened)
- 1⁄2 teaspoon vanilla extract

Add in after baking
- 1⁄4 cup raisins
- 1⁄2 cup dried banana pieces
- 1⁄8 cup dried cherries
- 1⁄8 cup peanut butter chips
- 1⁄8 cup carob chips
- 1⁄8 cup chocolate shavings (I used bittersweet)
- 1⁄8 cup mini chocolate chip (I used bittersweet)
directions
- In a big bowl combine all of the dry ingredients (nuts through flax seeds).
- Add the honey, applesauce and vanilla extract. Using your hands mix well making sure that everything is coated nicely.
- Spread the mixture on a rimmed paper-lined baking sheet pressing it together like you would in order to make cereal bars.
- Bake in the preheated oven at 160°C/320°F for 25 minutes turning the granola once after 15 minutes. This may vary on your oven so keep a close look on it during the last 10 minutes in order not to burn it.
- Remove from oven and immediately add in raisins, banana chips, cherries, pb chips, carob chips and shaved chocolate. Once the chocolate has melted, stir to ensure an even chocolate coating.
- Allow granola to cool and then break up bigger lumps and add in the mini chocolate chips.
- Store in an airtight container in a cool and dark place. It wont keep longer than a week due to the moisture content.
