- 1⁄2 cup vegetable shortening
- 1 cup brown sugar
- 2 eggs, separated
- 2 ounces semisweet baking chocolate, melted
- 1 3⁄4 cups cake flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon table salt
- 1⁄2 cup milk
- 1⁄2 cup chopped walnuts (optional)
directions
- Preheat oven to 350°F.
- Cream shortening and sugar with electric mixer (stand or handheld). When light and fluffy, beat in egg yolks and melted chocolate.
- Sift together flour, baking powder, baking soda, and salt. Add dry ingredients to creamed shortening alternately with milk, starting and ending with dry mixture.
- Beat egg whites to stiff peaks in a separate bowl. Fold beaten egg whites into batter by hand; fold in walnuts if using.
- Drop teaspoonfuls of cookie dough onto greased cookie sheets. Bake 7-9 minutes until edges of cookies are slightly crisp. Cool briefly on cookie sheet, then transfer to a rack until completely cool. Store in airtight containers.
