- 16 ounces egg whites, room temperature
- 2 1⁄2 cups sugar
- 16 ounces almonds, ground
- 2 1⁄4 cups pastry flour
- 12 ounces semisweet chocolate, melted
directions
- Preheat oven to 350.
- Place egg whites and sugar in a double boiler, continuously stirring to avoid scrambling, until it reaches 110 degrees.
- Combine dry ingredients.
- Remove bowl from heat and add dry ingredients.
- Return mixture to double boiler until 120 degrees. Cover and let stand 5 minutes.
- Scoop into balls by tablespoon and place on parchment paper. Bake for 15 minutes on until slightly golden.
- Melt chocolate in double boiler. When cool enough to handle, dip half the macaroon into the chocolate and set on parchment to completely cool.
