  • 16 ounces egg whites, room temperature
  • 2 12 cups sugar
  • 16 ounces almonds, ground
  • 2 14 cups pastry flour
  • 12 ounces semisweet chocolate, melted

directions

  • Preheat oven to 350.
  • Place egg whites and sugar in a double boiler, continuously stirring to avoid scrambling, until it reaches 110 degrees.
  • Combine dry ingredients.
  • Remove bowl from heat and add dry ingredients.
  • Return mixture to double boiler until 120 degrees. Cover and let stand 5 minutes.
  • Scoop into balls by tablespoon and place on parchment paper. Bake for 15 minutes on until slightly golden.
  • Melt chocolate in double boiler. When cool enough to handle, dip half the macaroon into the chocolate and set on parchment to completely cool.
