- 591.47 ml whole wheat pastry flour
- 118.29 ml cocoa powder
- 7.39 ml baking powder
- 4.92 ml baking soda
- 4.92 ml cinnamon
- 3.69 ml salt
- 236.59 ml sugar (I used sucanat)
- 3 whole eggs
- 118.29 ml unsweetened applesauce
- 78.78 ml virgin coconut oil
- 9.85 ml vanilla
- 473.18 ml zucchini, grate and packed
- 85.04 g semi-sweet chocolate chips
directions
- Preheat the oven to 350°F.
- Line muffin pans with liners (or grease well), set aside.
- In large bowl combine flour, cocoa, baking powder, baking soda, cinnamon and salt.
- In medium bowl whisk together sugar, eggs, applesauce, oil, and vanilla. Stir in zucchini.
- Add wet ingredients to dry ingredients. Stir just until moistened. Fold in chocolate chips.
- Distribute batter evenly. Bake 20-22 minutes or until a toothpick entered in center of muffins comes clean.
- Cool 5 min on a cooling rack.
