Chinese Chicken Morsels

- 1 1⁄2 lbs chicken breasts, boneless, skinless
- 1⁄2 cup lemon juice
- 1⁄4 cup soy sauce
- 1⁄4 cup Dijon mustard
- 2 teaspoons vegetable oil
- 1⁄4 teaspoon cayenne pepper
- 1 cup long-grain rice, uncooked
directions
- Cut chicken breasts into 1-inch cubes. Mix lemon juice, soy sauce, mustard, oil, and cayenne pepper. Put marinade and chicken in a 1-gallon bag and freeze.
- To prepare, thaw chicken and remove from marinade. Bring marinade to a boil in a small saucepan.
- Spray broiler pan with nonstick spray and place cubed chicken on the pan, with pieces about 1 inch apart.
- Broil 4 to 5 inches from heat for about 7 minutes, brushing with marinade once.
- Turn cubed chicken and broil another 4 minutes.
- While chicken is cooking, prepare rice according to package directions.
- Suggested sides: Lentil salad.

I have the once a month cook book by Mimi and Mary Beth. I have had it since 1984 when my children were young and had foster children living with us. This recipe was a favorite with all of my children. Now my 40yr old son is asking for this recipe to use in his home. I'm so happy to share the recipe with my son. Happy Grandma :)
