Childhood Favorite Potato Salad on Baguette

ingredients
- 3 ounces potatoes, cooked and chunked
- 1 1⁄2 tablespoons Miracle Whip light
- 2 celery ribs, diced
- 1 hardboiled egg, chopped
- 1⁄4 loaf baguette (about 4 thin slices)
- mustard (optional)
- ketchup (optional)
- salt and pepper (optional)
directions
- Mix potatoes, miracle whip, celery and egg to combine.
- Toast baguette slices until golden brown.
- Divide and spoon mixture on top of each slice.
- Serve immediately and enjoy!
- Note: Optional condiments are suggestions, feel free to use other condiments to your own personal liking. My dad always adds freshly ground black pepper on his salad at the end, after he mixes it.
