- 1⁄4 cup canned chick-peas
- 1⁄2 cup quartered cherry tomatoes
- 1⁄4 cup crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 2 teaspoons olive oil
- 1 teaspoon dried oregano
- 1⁄8 teaspoon salt
- 1 pinch pepper
directions
- Rinse and drain chickpeas.
- In a bowl, combine all ingredients.

What is it with feta, lemon and oregano that is soooo to-die-for??? This recipe was wonderful- so sophisitcated yet REALLY simple to throw together. I accidentally used 2 tbsp. of oil rather than tsp. but it was no problem... I used the suggestion of serving over baby greens along with some warm pita bread. So, so, so good. Such a keeper! Thanks so much for sharing, Faith77!!!!
