This is a very good dish. We served it over brown rice. I didn't have any apple brandy, so I used regular. The taste was still very good with the cider. I didn't care for the apple because it was too mushy in texture for me. DH liked it as is. I'm picky. I would change the apple to a firmer one next time and maybe add some pecans to the mixture. Made and reviewed as recipe of the day in Comfort Cafe - Thanks! :)

WOW, this is SO good! Personally I wouldn't change a thing. The chicken was very moist and tender. I made 2 servings and accidentally used 1/4 tsp of cinnamon instead of 1/8 but that worked well for me (so maybe I would change that one thing). The flavors work so well together that you feel like it's fine dining at an expensive restaurant. Kudos for this one. Made for Comfort Cafe, Jan 09.
