- 3 tablespoons mayonnaise
- 3 tablespoons lowfat apple-flavored yogurt or 3 tablespoons vanilla yogurt
- 1 tablespoon fresh lemon juice
- 2 1⁄2 cups chopped cooked chicken
- 1⁄2 cup chopped apple
- 1⁄2 cup diced celery
- 1⁄2 cup chopped pecans, toasted
- 1⁄3 cup dried cranberries or 1/3 cup dried cherries
- 8 slices whole wheat bread
- 4 lettuce leaves
directions
- In a large bowl, stir together mayonnaise, yogurt and lemon juice.
- Add chicken, apples, celery, pecans and cranberries; mix well.
- Taste and season with salt and pepper, if needed.
- Cover and refrigerate for at least 30 minutes or until well chilled.
- Place bread slices on a work surface.
- Arrange lettuce leaves over 4 of bread slices.
- Spread chicken salad equally over lettuce and cover with remaining bread.
