Chicken Sate with Peanut Sauce

We prefer the chicken breasts whole, with the sauce accompanying, but you can cut it into chunks and skewer it if you prefer. The sauce is SO good that I eat the leftovers with a spoon! (Also very good on toasted English muffins...)

  1. Combine butter, 1/4 cup soy sauce, coriander, and 2 Tbsp lime juice. Marinate chicken in this while you make peanut sauce: Saute onion and garlic in oil until tender.
  2. Cool.
  3. Place in blender, add everything else, and blend carefully.
  4. Slowly and carefully add enough boiling water to form a thick paste. Now, broil chicken until done, basting with marinade. Serve with peanut sauce.

Yum -- well worth it! I added yogurt to the peanut sauce to make the paste instead of water and it was a big hit. I served it with cool cucumbers in a yogurt-vinegar sauce (yogurt, vingegar, sugar) and some rice.

I made the chicken but didn't make the peanut sauce, as we don't care for it, but the chicken was excellent and we loved it!
