Chicken Pesto Pasta

ingredients
- 2 cups cooked chopped chicken
- 4 cups raw kale
- 4 cups raw spinach
- 4 ounces parmesan cheese
- 1⁄4 cup chopped walnuts
- 1⁄4 cup olive oil
- 1⁄2 cup garlic scape
- 8 ounces whole wheat pasta
directions
- Place parmesan, kale, spinach, walnuts, garlic scapes and olive oil in food processor - process til smooth.
- Cook whole wheat pasta in boiling water.
- Drain- reserving 1/4 c pasta water.
- Place chicken in pan pasta was cooked in - allow to warm slightly.
- Mix pasta, pasta water and 1/2 pesto in with chicken.
- Enjoy!
- Note - garlic scapes are the curly tops garlic plants sprout early spring. Use minced garlic to taste if not available.
