CSA veggies to use up - leftover chicken to use up - good stuff!

Directions

  1. Place parmesan, kale, spinach, walnuts, garlic scapes and olive oil in food processor - process til smooth.
  2. Cook whole wheat pasta in boiling water.
  3. Drain- reserving 1/4 c pasta water.
  4. Place chicken in pan pasta was cooked in - allow to warm slightly.
  5. Mix pasta, pasta water and 1/2 pesto in with chicken.
  6. Enjoy!
  7. Note - garlic scapes are the curly tops garlic plants sprout early spring. Use minced garlic to taste if not available.
