The classic French dish poulet a la diable goes meatball. Fantastic when served with garlic mashed potatoes and pepperocini.
- 1 lb ground chicken
- 1 tablespoon coarse-grain Dijon mustard
- 1⁄4 teaspoon crushed red pepper flakes
- 1 egg
- 1⁄2 cup breadcrumbs
- Mix the ground chicken, mustard, and red pepper. Beat the egg in a bowl or glass measuring cup. Add the egg and the breadcrumbs to the chicken mixture. Mix well, then shape into 1-inch balls.
- Chill for about 2 hours.
- Bake in the oven at 375 for about 30 minutes, or until cooked through.
