- 3-4 boneless skinless chicken breasts, and cubed
- 1 medium red pepper, chopped
- 1 medium yellow pepper, chopped
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 44.37 ml olive oil
- 29.58 ml chili powder
- 4.92 ml cumin
- 425.24 g can black beans, rinsed and drained
- 425.24 g can kidney beans, undrained
- 793.78 g can plum tomatoes with liquid, chopped
- 340.19 g can beer
directions
- In a pot, saute chicken, peppers, onion and garlic in oil for 5 minutes or until chicken is no longer pink.
- Stir in seasonings and cook for 3 minutes.
- Stir in beans, tomatoes and beer; bring to a boil.
- Reduce heat and simmer uncovered for 15 minutes. Stirring often.
- *I have done this in the 15 minute time frame, and leaving it simmer all afternoon - either way is good.
