Chicken Breasts With Black Cherry Raisin Sauce

- 4 boneless skinless chicken breasts, halved
- 2 cups canned black cherries or 2 cups frozen black cherries, no sugar added
- 1 tablespoon Worcestershire sauce
- 1 teaspoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon dry sherry
- 1⁄2 cup onion, chopped
- 1⁄4 cup raisins
- 2 teaspoons cornstarch, dissolved in
- 1⁄4 cup cold water
directions
- Preheat broiler.
- Place chicken breasts on broiler rack and broil 3 minutes a side, until browned.
- Transfer to an 8 x 8 x 2-inch baking dish.
- In a blender or food processor, combine 1 cup of the cherries, Worcestershire sauce, brown sugar, garlic powder, and sherry; process until pureed.
- Pour into a small saucepan; add onion, raisins, and cornstarch mixture.
- Cook, stirring occasionally, over medium-high heat until mixture thickens.
- Pour cherry sauce over chicken breasts.
- Add remaining cherries.
- Turn oven heat to 350 degrees f. and bake 30 minutes.

<p>I've collected recipes since I was a teen. After all these years I'm trying to get all my index cards and clippings, that still sound interesting to me, posted here so that I can find them and eventually make them! <br /> <br />I've posted some of my Mom's recipes. I regret not having paid more attention to my Grandmothers' cooking. They made some dishes that I miss and there were/are no recipes for them. <br /> <br />I have a wonderful DH and 2 wonderful sons. They are thrilled that I found this site since they directly benefit from it! Before finding 'Zaar, I was less of a cook and more of a recipe collector but now I try many more things and we're having more fun in the kitchen (at least I am)! <br /> <br />Thanks for all your ratings, comments and help in the forums AND for posting so many great recipes. You've enhanced my cooking skills and expanded my horizons!
