Chicken Breasts With Apple-Cranberry Sauce

- 44.37 ml flour
- 2.46 ml salt
- 1.23 ml pepper
- 29.58 ml spicy brown mustard
- 4 boneless skinless chicken breast halves, about 4 oz. each
- 14.79 ml vegetable oil, for the chicken
- 4.92 ml vegetable oil, for the sauce
- 2 apples, halved, cored, each half cut into 8 wedges
- 236.59 ml canned whole cranberry sauce
- 118.29 ml apple cider or 118.29 ml apple juice, can also use chicken broth
directions
- Mix four, salt and pepper on waxed paper or a plate.
- Rub mustard all over the chicken, then coat in the flour mixture, shaking off excess.
- Heat 1 tablespoons oil in a large nonstick skillet over medium heat.
- Add chicken and cook 4 minutes per side or until browned and opaque in center.
- Remove to a serving platter; cover loosely to keep warm.
- Heat 1 teaspoons oil in skillet, add apples and cook, stirring often, 4 minutes or until slightly softened.
- Add cranberry sauce and cider; stir until boiling.
- Serve over the chicken.

<p>I've collected recipes since I was a teen. After all these years I'm trying to get all my index cards and clippings, that still sound interesting to me, posted here so that I can find them and eventually make them! <br /> <br />I've posted some of my Mom's recipes. I regret not having paid more attention to my Grandmothers' cooking. They made some dishes that I miss and there were/are no recipes for them. <br /> <br />I have a wonderful DH and 2 wonderful sons. They are thrilled that I found this site since they directly benefit from it! Before finding 'Zaar, I was less of a cook and more of a recipe collector but now I try many more things and we're having more fun in the kitchen (at least I am)! <br /> <br />Thanks for all your ratings, comments and help in the forums AND for posting so many great recipes. You've enhanced my cooking skills and expanded my horizons!
