- 4 large boneless chicken breasts (or 8 small)
- 1⁄2 teaspoon salt
- 1⁄4 - 1⁄2 teaspoon black pepper
- 2 tablespoons olive oil or 2 tablespoons salad oil
- 2 tablespoons butter or 2 tablespoons margarine
- 3 tablespoons fresh chives, chopped or 3 tablespoons green onions
- 1⁄2 limes, juice of or lemon
- 2 tablespoons brandy (optional) or 2 tablespoons cognac (optional)
- 3 tablespoons parsley, chopped
- 2 teaspoons Dijon mustard
- 1⁄4 cup chicken broth
directions
- Place chicken breast halves bwtween sheets of waxed paper or plastic wrap and pound slightly with a mallet. Sprinkle with salt and pepper.
- Heat 1 tablespoons each of oil and butter in large skillet.
- Cook chicken over high heat for 4 minutes per side. Do not cook longer or they will be over cooked and dry. Transfer to a warm serving platter.
- Add chives or green onion, lime juice, and brandy , if using, parsley and mustard to pan. Cook 15 seconds. Whisking constantly.
- Whisk in broth. Stir until sauce is smooth Whisk in remaining butter and oil.,.
- Pour sauce ofer chicken. Serve immediatley.

This recipe was a life-saver! Our electricity is out in half of our house due to 24 inches of snow. We can't use the stove, so I hooked up an electric skillet in another part of the house. I didn't have fresh chives or green onions and didn't use the booze. I only had dried parsley. I added fresh mushrooms to the broth before pouring it over the chicken. It tastes awesome! The chicken was tender and so were the mushrooms and the sauce is really delightful! I am going to make this again once I get my kitchen back. It was fast, easy, and delicious!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
