  • Place chicken breast halves bwtween sheets of waxed paper or plastic wrap and pound slightly with a mallet. Sprinkle with salt and pepper.
  • Heat 1 tablespoons each of oil and butter in large skillet.
  • Cook chicken over high heat for 4 minutes per side. Do not cook longer or they will be over cooked and dry. Transfer to a warm serving platter.
  • Add chives or green onion, lime juice, and brandy , if using, parsley and mustard to pan. Cook 15 seconds. Whisking constantly.
  • Whisk in broth. Stir until sauce is smooth Whisk in remaining butter and oil.,.
  • Pour sauce ofer chicken. Serve immediatley.

  1. This recipe was a life-saver! Our electricity is out in half of our house due to 24 inches of snow. We can't use the stove, so I hooked up an electric skillet in another part of the house. I didn't have fresh chives or green onions and didn't use the booze. I only had dried parsley. I added fresh mushrooms to the broth before pouring it over the chicken. It tastes awesome! The chicken was tender and so were the mushrooms and the sauce is really delightful! I am going to make this again once I get my kitchen back. It was fast, easy, and delicious!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
