This is always a hit. You can either serve it on a lettuce leaf or in a croissant. Disappears fast.
- 2 cups diced cooked chicken breasts (can used canned)
- 1 cup grapes, cut in half
- 1⁄2 cup diced celery
- 1 cup diced fresh apple
- 3 -4 tablespoons chopped nuts
- 1⁄2 teaspoon curry (optional)
- 1⁄2 lemon, juice of
- 1 cup mayonnaise
- Place chicken, grapes, celery apple and nuts in a bowl. Mix together mayonnaise, lemon juice and curry and fold into chicken mixture. Serve on a lettuce leaf or on a croissant.
