  • Slice onion diagonally into 1/2 inches segments. Cut thigh into small pieces. Lightly beat eggs.
  • Combine water, mirin, soy sauce, sugar.
  • Make one serving at a time. Add half of liquid mixture to sauce pan and bring to boil on medium heat.
  • Add half of onion and chicken and cover with lid slightly askew. Simmer until chicken is cooked.
  • Add half of egg mixture, drizzling over a fork in circular motion. Cover immediately and simmer on low heat for 30 seconds. Remove from heat and let sit for 20 seconds.
  • Serve over hot rice.
  • Repeat process for second serving.
