Chicken and Egg Donburi

- 1 boneless chicken thighs
- 2 eggs
- 1 green onion
- 1 cup water
- 4 tablespoons mirin
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 4 cups cooked rice
directions
- Slice onion diagonally into 1/2 inches segments. Cut thigh into small pieces. Lightly beat eggs.
- Combine water, mirin, soy sauce, sugar.
- Make one serving at a time. Add half of liquid mixture to sauce pan and bring to boil on medium heat.
- Add half of onion and chicken and cover with lid slightly askew. Simmer until chicken is cooked.
- Add half of egg mixture, drizzling over a fork in circular motion. Cover immediately and simmer on low heat for 30 seconds. Remove from heat and let sit for 20 seconds.
- Serve over hot rice.
- Repeat process for second serving.
