Cheesy Potato and Onion Casserole

"This recipe is originally from an old cook book of mine 'Vegetarian Cooking Made Easy' by Veronica Vezza. It's a really hearty and tasty dish. I like to add some mustard to the cheese sauce to give it some kick. Serve with cabbage and sausages."

  • Preheat the oven to 375 degrees (Gas Mark 5).
  • Peel and slice the onions.
  • Slice the potatoes.
  • Skin and slice the tomatoes.
  • Place all in layers in a greased baking dish, seasoning and scattering herbs between layers.
  • Dot with margarine.
  • Cover and cook in oven for 50-60 minutes, until tender.
  • Make up the cheese sauce.
  • Remove the dish from oven and pour over the sauce, return to the oven for a further 15 minutes until golden.

  1. Since we're a family that adores cheesy potatoes this was a good supper for us. I made this the other night when some comfort food was needed. This is a very good recipe, but it's only disadvantage is that there are no instructions how to make the cheese sauce. I've been cooking for a while and can make a roux, but beginner cooks will get lost here. Just to clarify things, to make the cheese sauce, melt the margarine (I used butter) in a sauce pan. Add the flour all at once and stir until it is completely incorporated into the margarine. Add the milk, and continue stirring all the time until the sauce has achived the desired thickness. Add the cheese and continue stirring until the cheese has melted into the sauce.
     
  2. this was a big hit in this house, it will be a make again for sure, as for the herbs that are put in it I wasn't sure which ones to use. Also I don't use pints or ounces so I just made the cheese sause the way I normally would for other recipies I have, also added some worshesteshire sauce
     
  3. This was a good and easy recipe. I didn't add the tomatoes and onion, I just threw in a few extra potatoes. For the sauce I just threw all the ingredients into the saucepan on low heat and stirred and it turned out great(I used swiss cheese for a different flavor-yummy!). Will definitely make this again!
