Cheesy Ham Loaf

"This is great to have warm form the oven and the next morning for breakfast. I tried to grind up the ham and cheeses and it wasn't quite as tasty. Seems better to use cubes."

  • Brown bacon over medium heat until light golden brown. Drain.
  • In large mixing bowl, beat eggs uintil foamy.
  • Add milk, flour, baking powder and salt. Beat until smooth.
  • Stir in remaining ingredients and bacon; blend well.
  • Pour into greased and floured 9X5-inch loaf pan.
  • Bake at 350 for 50 to 60 minutes until golden brown.
  • Remove from pan. serve hot, cut in slices.
  • tips: if desired, add 1 teaspoon prepared mustard.
  • recipe can be doubled and baked in 2 9X5 loaf pans.
  • I have sometimes added a chopped onion which I had cooked in the bacon grease.
