Three ingredients, fifteen minutes and soups on.
- 3 eggs
- 3 tablespoons grated parmesan cheese (can use cheddar but increase to 1/4 cup or more shredded)
- 6 cups chicken stock
- Beat eggs until frothy.
- Stir in cheese.
- Bring broth to a boil and remove from heat.
- Pour in egg mixture, stir gently until eggs set.
Well, it's not the prettiest soup LOL but it certainly hits the spot. You can't beat the convenience factor and paucity of ingredients. It pays to use a strong tasting cheese to give this extra taste - this is not the time to use young or plastic tasting cheese!
