A cold weather soup to warm you. Easy to make lacto-vegetarian.

  1. Melt butter in large saucepan.
  2. Cook onion until softened.
  3. Blend in flour.
  4. Stir in stock.
  5. Bring to a boil, stirring until thickened.
  6. Add potatoes and bay leaf.
  7. Reduce heat.
  8. Cover and simmer, stirring occasionally for 10 minutes.
  9. Add broccoli and simmer, stirring occasionally for 10 minutes.
  10. Stir in milk and cheese.
  11. Heat until cheese melts.
  12. Remove bay leaf.
  13. Do not let soup boil.
  14. Season to taste.

A great, easy soup. I have also made a variation substituting cauliflower for the broccoli and Gouda or Swiss cheese for the cheddar.
